I eat eggs for breakfast nearly every day. With the chicken craze here in Portland and my penchant for farm-fresh food, I’m fairly picky about egg quality too. Nothing upsets my apple cart more than a pale yellow yolk. BLAH! And there’s nothing more beautiful than an egg from a healthy happy chicken, one who’s been ranging and feeding on bugs and grass. The dark golden color of the yolk is a harbinger for the fuller flavor to follow. Basically, you take good care of the girls (hens) and they take good care of you providing better taste and more nutrients in their eggs. Eat enough good eggs and eventually you’ll become an egg snob or connoisseur. Live as an egg connoisseur long enough and you’ll start seeing eggs everywhere!
